In an exclusive interview with Jeannie Cho Lee, Asia’s first Master of Wine, she will share her expert insights into this year’s Burgundy line-up and the trends driving the region’s growing appeal.

One of the Festival’s wine panellists, Matt Hui (Matt Sir), will reveal how Bordeaux wines can be paired with beloved Hong Kong flavours, offering East-meets-West dining experiences.

More than 20 masterclasses will also be hosted, where experts will guide participants through wine tastings while sharing their professional insights and expertise.

For many wine lovers, Bordeaux and Burgundy are among the world's best-known wine regions. Yet when faced with a wine list or tasting counter, choosing where to begin can be daunting. At this year's Hong Kong Wine & Dine Festival, visitors can explore both iconic French wine regions under the stars along Victoria Harbour, without travelling to France. The Grand Wine Pavilion will bring together a remarkable collection of premium wines from around the world, with French labels taking centre stage. In addition to selections from top Bordeaux châteaux, the world-renowned Burgundy region will showcase an array of highly sought-after wines.

Understanding Burgundy: Jeannie Cho Lee, Asia's First Master of Wine, Explains the Region's Enduring Appeal

As an annual international wine and culinary celebration, the Hong Kong Wine & Dine Festival brings together some of the world's finest wines, with French labels consistently among its highlights. In recent years, Burgundy has continued to gain popularity across Hong Kong and Greater China, becoming one of the most sought-after wine regions among enthusiasts and collectors alike. In an exclusive interview, Jeannie Cho Lee, Asia's first Master of Wine, will share her insights into Burgundy's unique appeal and terroir-driven character and introduce a selection of Burgundy wines featured at this year's Festival.

Why Is Burgundy Becoming Increasingly Popular?

Interest in Burgundy has soared over the past decade, both in Hong Kong and across Greater China, demonstrating that the market has become increasingly interested in exploring different wine styles and regions. According to Jeannie, Burgundy’s freshness, finesse and generally lighter profile align naturally with today's preferences for more health-conscious, ingredient-driven cuisine and lifestyles.

She also points to the growing appreciation for craftsmanship and authenticity. Many Burgundy domaines are small, often family-owned, and individual winemakers, vineyard sites and traditions all contribute to a strong sense of identity and place.

"Scarcity is another important part of Burgundy's allure," she explains. "Grand Cru and Premier Cru vineyards are fixed, delimited appellations, and even at the village level, production is inherently limited by the small scale of the vineyards. You cannot simply expand production when demand rises. Add to this Burgundy's extraordinary heritage and the capacity of its finest wines to age beautifully, and it is easy to understand why the region inspires such fascination."

Burgundy Meets Hong Kong Flavours

Perfect Pairings from Seafood to Cantonese Roast Meats

Jeannie notes that wine lovers across Asia, particularly in Hong Kong, are increasingly discovering how naturally Burgundy complements Asian cuisines. She recommends pairing Chablis, from Burgundy's cool northern region, with delicate steamed dishes, while richer whites, such as Meursault, Beaune Blanc and Chassagne-Montrachet, work beautifully with stir-fried seafood. As white Burgundies age, they become more generous and complex and pair extremely well with white meats.

Cantonese roast meats are equally rewarding partners for Burgundy Pinot Noir. Richer dishes, such as roast duck and pork, go well with fuller-bodied reds, such as Gevrey-Chambertin, Nuits-Saint-Georges and Vosne-Romanée, while lighter meats, such as chicken and goose, pair beautifully with wines from Beaune, Volnay, and Chambolle-Musigny.

This year's Festival will showcase a diverse selection of wines from Burgundy's renowned appellations and producers. To help visitors explore this celebrated wine region, Jeannie shares recommendations tailored for various wine preferences, offering guidance on wines that reflect the distinctive character and appeal of Burgundy.

Festival Wine Panel Member Matt Sir Shares Unexpected Bordeaux Pairing Tips

Bordeaux, one of France's most celebrated wine regions, has long enjoyed a loyal following among Hong Kong wine enthusiasts. While often associated with fine Western dining, Bordeaux wines can also pair remarkably well with Hong Kong's local culinary favourites. Matt Hui (Matt Sir), one of the Wine Panellists at the Hong Kong Wine & Dine Festival, shares four Bordeaux recommendations and their suggested Hong Kong food pairings, showcasing the versatility of Bordeaux wines across various cuisines.

【Beginner’s Must-try】

Château Malescasse 2020 ╳ Scallion Lamb Roujiamo

Château Malescasse 2020 is an ideal, value-focused introduction to classic Cabernet-driven Bordeaux. The bold, structured tannins of this young Haut-Médoc Cabernet Sauvignon cut effortlessly through the rich lamb fat, while its cedar and oak notes mirror the smoky, wok-fried scallion flavours, refreshing the palate with every bite.

【Bordeaux Enthusiasts’ Choice】

Château Gazin 2014 ╳ Wagyu Beef Cheek, Turnip, Aged Tangerine Peel, Braised

Château Gazin offers Right Bank lovers a rich, Merlot-dominant profile, with notes of dark plum, truffle and polished, velvety tannins that are now entering their prime drinking window. Slow-braised beef cheek mirrors the wine's silky texture, while the subtle citrus nuances of aged tangerine peel beautifully complement the savoury complexity of this mature Pomerol.

【A Rare Find】

Château Beychevelle 1982 ╳ Sham Tseng Style Roast Goose “Bao”

The legendary 1982 vintage displays beautifully mature tertiary notes of cigar box, cedar, leather and dried fruit. The silky, fully evolved tannins and vibrant acidity of this Saint-Julien Magnum cut effortlessly through rich goose fat, while its layers of leather, cedar and sweet spice harmonise perfectly with the savoury-sweet flavours of hoisin sauce and five-spice seasoning.

【A Hidden Gem Discovery】

Château Dalem 2014 ╳ Hong Kong-style Satay Beef Bun

Fronsac remains one of Bordeaux's best-kept secrets for authentic Right Bank character. Château Dalem produces concentrated, Merlot-driven wines layered with ripe plum and spice, offering exceptional value alongside some of its higher-profile neighbours. The ripe plum fruit, gentle oak spice and medium-plus body of this mature Fronsac complement the nutty, savoury character of satay sauce, while its fresh acidity cuts effortlessly through the richness of the beef and soft bun.
