【雲上嶺南】Shunde Double-skin Milk is not as ordinary as it looks
順德雙皮奶,看似普通卻韻味悠長
Double-skin milk (Steamed Milk Egg Custard) is a Cantonese dessert that originated in Shunde, Guangdong province, and ismadeof water and milk. It gets its name from the fact that when milk is boiled and cooled, the proteins on the surface of the milk condense into a first layer. A small hole ismadein the middle of the membrane to allow the milk inside to overflow. The membrane will stick to the bottom of the bowl. When the milk is reheated and egg whites are added, a second film is created on the surface. When steamed and served cold, it has a double skin texture. Double-skin milk looks ordinary, but it has a rich aroma and taste, reminding people of 「the taste of my mother’s cooking」.
雙皮奶是一種粵式甜品,起源自廣東順德,用水牛奶做原料。雙皮奶有兩層皮,將牛奶煮熱後放涼,牛奶表面的蛋白質會凝結成一層膜,在膜之中間挖個小孔,讓裏面的奶溢出,膜就會黏在碗底,牛奶再加熱時加入蛋清,表面又會產生一層新的膜,蒸熟放涼吃的時候就是雙皮的感覺了。雙皮奶看似普通卻韻味悠長,吃起來香氣濃郁,讓人想起「媽媽的味道」。
