Fresh seasonal foods are fueling a surge in consumer demand across China, as springtime harvests and seafood delicacies settle on the tabletops of eager diners.

With the Yellow River now fully thawed, Dongping Lake, located in the river's lower reaches in east China's Shandong Province, has entered its peak season for fresh fish. The nutrients brought by the convergence of the lake and river create ideal conditions for freshwater fish to thrive.

Among the many varieties, including carp, grass carp, and silver carp, the most sought-after is crucian carp, which grow plump and full of roe as they prepare to spawn this time of year. Slow-cooked crucian carp soup, known for its rich flavor and creamy texture, is drawing food lovers from near and far.

Just to the south of Shandong, in Tongcheng City, Anhui Province, spring watercress is being harvested. Tongcheng watercress is a seasonal favorite, known for its year-round green color, whisker-like roots, jade-white stems, and its fresh and crisp taste.

Further south, in the mountain village of Junying in Fujian Province, which sits at over 900 meters above sea level, unique spring vegetables such as wild onions and mustard greens are in season. Villagers gather these spring greens to make thin pancakes, savoring the flavors of the season. A medley of more than a dozen ingredients is stir-fried together to create a dish rich in taste.

As temperatures steadily rise, Lanzhou City in Gansu Province is seeing an early arrival of spring vegetables in bulk. Local supermarkets and farmers' markets are now stocked with over 20 varieties, including Chinese toon sprouts, alfalfa, bamboo shoots, and shepherd's purse. Restaurants are blending local culinary traditions with the freshness of spring, offering a range of seasonal dishes with distinct flavors in the country's northwestern region.

The Tianzhou-9 cargo craft, tasked with carrying supplies for China's space station, undocked from the station combination at 16:34 Wednesday (Beijing Time) and switched to independent flight, according to the China Manned Space Agency (CMSA).

The cargo craft will re-enter the atmosphere in a controlled manner at an appropriate time. During the process, a small amount of debris that survives the ablation will fall into the designated safe waters, the CMSA said.

Tianzhou-9 was launched on July 15, 2025 from the Wenchang Spacecraft Launch Site in the southern island province of Hainan, and then docked with the orbiting Tiangong space station. It carried supplies including astronaut consumables for in-orbit stay, propellant and application experiment equipment.
